The Amrath Hotel Frans Hals is very nice, stayed there back in June for about £75 for a double room. Don't bother with the breakfast as it's just off the main square and there's loads of good Cafes which are cheaper.

King of Scandinavia still runs as well as the Princess of Norway.
I much prefer travelling by boat, it has the added bonus that you can smoke your way home

There are some very cheap deals at www.dfds.co.uk at the moment, just booked a 3 night break (2 on ferry, one one in a hotel on Darmstraat) for £85 p.p. You can do a day trip (inc. 2 nights on ferry) for £40, ferry crossing includes en suite bedrooms too.
