Keep in mind Amsterdam's not really a "great view" kind of city: there are no sky-scrapers in the center and the whole place is as flat as a bowling lane. I can't think of any coffeeshops or bars that were on the top floor of the buildings. If you go to the North, there are a bunch of cafe...

According to the opening hours list I copied and pasted from the forum a while back, Voyagers opens 7am Thursday through Saturday and 8 am the rest of the week. At 7am, there's also Hunter's and Popeye's. If you can wait 'til 8, Picasso opens as well.

Keep in mind that most of the Netherlands is within a relatively short distance of Eindhoven. I mean, Amsterdam is, what, an hour and a half away?
