Hello Colinzeal, hope all the replies here are not to late. However, enjoy your time in Eindhoven(I go there regulary).
I tend to smoke a bit more hash but like good weed, too.

With weed you can't really go wrong there but - in my opinion - stay away from the flavoured strains(apple e.g.). I like their version of Amnesia Haze the most and recently their K2 was also lovely.
Tend to be a buy&fly kind of place, modern and bright atmosphere. Internet for free.
Upstairs I haven't been for a while and bought Jack Herrer(6€/bag - indica feeling)which was good.
New Wave I had White Pearl(arround 8€/bag - indica feeling)which was a bit too wet but got a nice effect. A nice place to relax in my opinion, decent staff.
At
Eurogarden you should try Super Silver Haze(8€/bag), good example of this strain. Their Amnesia Haze(8,50€/bag)wasn't impressing me, it was still good but missed something.
Hash: their Cristal(9€ I guess)is good but
Grasshopper's hash is better, their Ice-o-lator(10€/bag)lacked a punch in my opinion.
Their chocomel with whipped cream and the staff is nevertheless nice

Sindbad is a little neighborhood coffeeshop, nice interior. Not that much traffic when I have been there once. Locals come and go. Pretty limited menu(but not as limited as the
Casablanca coffeeshop

By the way: not worth going there as I have been recently). I went for a weed called Sudden Death which was nice nevertheless. But they don't even have a haze listed.
I would suggest you to go to the
Indian instead. Similar interior and a better atmosphere in my opinion. About 15 minutes walk from the Grasshopper. Try their Super Silver Haze(12€/g, weighed) or Amnesia Haze(11,50€/g, weighed - nice version of this strain). Sometimes they carry a house haze for 11€/g but I couldn't catch it until now. Their hash I haven't tried either.

Please try their Cristal Royal as it's one of the best hashes available in the Netherlands. Highend morrocan hash,
easily on par with the top notch hashes I bought in Amsterdam last year(very uplifting high). 10€/g.
Their Hija-Hija for 8€/g is the best hash(second for that price is Twizla from
Grasshopper) for that price in Eindhoven(a bit more on the indica side).
But they offer good weed as well(in general this shop also belongs to the best in town): tried some of their hazes and liked them.
They weigh all in front of you(I only mention this don't have a problem with pre-packed bags as long as everything is fresh and good. Nevertheless I will always have a look.). It's a little walk of twenty minutes from the station as it lies in the very north of Eindhoven. But well worth the way and time. Note: their interior is pretty basic so I only buy and leave.
One name forgotten to mention is also
The Snooker(guess why it's called that way). Lovely neighborhood-coffeeshop. This is my shop for atmosphere(not dark, clean and a lot of friendly locals). Their stuff is nevertheless good but not outstanding. Solid(had their White Widow and Silver Pearl and one type of hash which name escapes me now).
I would suggest to smoke your stuff there and buy something from the menu. Try it.
The Pink coffeeshop is also a nice place to sit in. Can't mention this enough: I regret their limited menu since the raid and closure of last year. They offer the strongest ice-o-lator Bubble Ice(15€/0,85g, indica feeling). Their White Widow XX was nice, too.
Hope I didn't forget something. Please consider that all menus in Eindhoven "only" provide standard strains like White Widow, Northern Lights etc. and in general one type of haze. In opposite to Amsterdam where you can find "newer" strains.

Have been in Tilburg some time ago. Yes,
Toermalijn is good for choice and atmosphere,
De Muze for quality(their Super Silver Haze was nice. Their interior is pretty basic but the drinks are cheap and the budtenders are pretty cool.).
Check also
The Rif coffeeshop only a few doors next to
Toermalijn. Their best hash looked good(arab shop, mostly visited by middle eastern people) - only went in and talked to the very polite budtender, not a very inviting place though.
Crackers I visited also. Very oldschool in my opinion(if you go you know what I mean), liked it immedeately but had no time to buy or stay.
Can't say anything about eating in Eindhoven or Tilburg but I know
Grass Company(one of the biggest coffeeshops I have ever seen. All in all pretty professional as it seems - no offence intended.)
Before I forget this:
La Folie and
De Bakkerij(moved some doors)in Eindhoven are okay to hang out, indeed.
