Tipping on Frequent Visits

I've always encountered strange looks or confusion from the budtender and/or drink maker whenever I try to tip. It's usually just the change from my purchase (less than 2 Euro). I just chalked it up to tipping not being a normal practice in the EU. I still do it, but mostly because I spent so much time working in the service industry.

I still can't fathom out why some clubs want you to tip the bouncer on the way out,imho that is called Tax,
