Siberie is nice local coffeeshop, quite big and friendly staff.
Dampkring for the malaki if they have it.
Dampkring again for some mexican haze, reaaaaaaaaaaaally nice smoke.
Katsu for the Black widow or Mellow Yellow for the Sleeze, brutal smokes.
Soft Temple had some lovely cheese last week so check it out.

Afghan Haze was an ok smoke but we were so stoned I don't think it had much of an effect on me as I'd have liked...

LaTertulia is a nice quiet shop with food and snacks, run by a Mother Daughter team; situated on the lovely Prisengracht. Close to that is Paradox another nice Local shop with food and good gear! In that proximity is rokerji 4 and Amnesia.
S5 Haze from Mellow Yellow is one of the best, at least close to, pure Haze's around. Also, Hindu Kush from Media or OG-18 from Katsu would be some of the closest pure Indica's available.
