Trip in May

I am heading to Amsterdam for the second time at the end of May. I will arrive May 27th and depart May 31 so it's a short trip. The wifey wanted to go to Hawaii this year so I said okay if we could slip this trip in over the Memorial day weekend. We are staying on a houseboat near Muntplein. I have a few Coffeeshops and a few things picked out already. The wife has one thing she wants to do so our days are pretty full already. I have done lots of research already but to save fumbling around time I have a few questions and I was hoping y'all could provide some answers.
1. The last time we stayed at the Black Tulip on Geldersekade not far from Centraal Station and this time we will be on a houseboat all the way down by Muntplein so I was wondering how is the area down there? For future reference does anyone know of another hotel like the Black Tulip (BDSM, not necessarily gay)?
2. I see they now have the OV-chipkaart so you don't have to think to hard about riding the trams but I was wondering if that card covers the ride from Schiphol to Centraal? I'm still getting the card I just want to know what to do so as to not waste time. From Centraal it looks like lines 16, 24, 25, 4 and 9 all stop at Muntplein, can anyone confirm this?
3. We were looking at taking a country bike tour, maybe Mike's. Anyone have any experiences with Mike's and can you smoke on the tour?
4. I was looking at a comedy night at the Melkweg has anyone ever been to this place? Also, since this will finish up late how late do the trams run? Is there anything else to see around Leidseplein?
5. We are going on the Wetlands Safari and I was wondering if anyone else has been on this and had any comments. Are they smoke friendly?
6. There are numerous Coffeeshops to choose from around Muntplein and I have read the reviews and but I was wondering if anyone can make recommendations for or against any of them? I like to buy a couple of grams, a hot chocolate and hangout for a little while, maybe try a vaporizer. I do plan on going to Rusland as my wife likes tea a lot. My preferences are laid back and not too touristy, not too crowded or loud, good prices and good weed, in that order. No rap music.
7. Food. We like most foods, except the wife doesn't like seafood, and a nice dining experience. I was looking at the Nursery, Fifteen and Blauw. Money is not a factor but value is. Anything around Muntplein that stands out? Any good French places? Does anyone know of a good boulangerie to get croissants around Muntplein?
8. Does anyone know of a good place to talk to American expats (I'm getting tired of waiting for the WOD to end here in the USA)?
