I haven't got any coffeeshop recommendations as Amsterdam isn't my regular c-shop scene, but as a general rule, light hashes will be more high up in the head and dark hashes stoned in the body. Any Nepalese hash is usually towards the top end of the menu (apart from Isolators) and I really like their spicy flavour, so if in doubt I'd recommend those. Indian Charas or anything from the Himalaya region usually falls into the same category. A good Afghani hash can be similar, with a strong physical effect, but the vast majority of Afghan hash in the Netherlands is between crap and average (cheap, though).
Lebanese hash is meant to be a real treat if you can get the real deal, and the Yellow Lebs I've tried in Groningen have been really nice hashes, but I'm not sure if they've actually been Lebanese, since I've heard all kinds of stuff about the export being dead for the last few years.
I have to say the staple of my hash stash has always been the Nepali temple ball. It's usually available at a reasonably affordable price, but packs a heavy punch so it will last a long way! I usually sample a little bit on its own for the flavour, but end up toking the most as a compliment to weed spliffs or bong hits to give them that extra knockout power in the evening.
