Here is the deal, I am looking for something that is not going to make my heart race. I do not want anything that is speedy, I am looking for a nice, mellow chill high.
Strong is ok, I just don't want my heart to race. If anyone can make some recommendations that would be great. I will be staying at the Nh Amsterdam Centre which is near Leidseplein so a coffee shop in that area would be nice as well.

You want something at least half indica, IMO. There are plenty of strains everywhere which will give you the desired effect, just tell the budtender you want "indica dominant" or just ask for something that meets your desired criteria.
Shops in the area:
Rookies - they normally carry a strain "Rookies" which is not super strong and is pretty mellow. Should be 8 Euro per gram IIRC. I have smoked a fair amount of it. Rookies is a great hangout, as well. Solid coffee, don't know about the tea, but I do enjoy a late night mint tea there. They steep frest mint leaves in hot water and serve it right up. I would describe the music as "above average", whatever that means.
Dolphins - mixed reviews on this place. My experiences have been mostly "meh", due to service and attitude.
Bulldog - prebagged, ultimate tourist place, forget it.
Noon - have not been there in a while but used to be known for Blueberry, hash was pretty good IIRC.
The real gem is 1e Hulp, a 10-15 minute walk from Leidseplein. You could even hop a tram and be there in a minute or two.
