It is not the individual coffeeshops that make you take your hat off. From what I have heard, over the last couple of years, is that if a shop has security cameras installed in the shop, the law says you must ask customers to remove their head gear so that faces can be seen in the cameras, so people can be identified, if need be. I really dont think it's going to have much impact if you avoid these shops that must ask you to remove your hat. Is your hat that important, inside of a shop? Most people dont care if your crazy hair is messy. Peace.

Puffin13, your response is correct that it's because of security cameras. But it is the individual coffeeshop that makes the decision that you have to take off your hat. man - just take of your hat! Most people in the coffeeshops are too stoned to notice your 'hat-hair' anyway! Also, try not to be so self-concious!
I had a hat experience at the Rokerijj near to Leidesplein a few trips ago. It was absolutely pi~#ng it down with rain so i was wearing an Ajax wooly hat. I went into Rokerijj and was looking at the menu - i noticed this woman ranting at me from over in the corner - she was going off her head but in Dutch so i didn't understand what she was saying. The budtender said, really calmly, i think she wants you to take your hat off. Obviousy the Ajax hat had made her think i was Dutch and just ignoring her!

i had the same kind of experience back in 04 at Rokerij III, the budtender is down some stairs and before we went down they told us we had to remove our hats so the camera could see us, in case we did anything down stairs, but once we came back up to smoke and buy drinks we could put the hats back on.
