My personal favorite is the fried cheese and bacon sandwich.

Cook the bacon in the frying pan. As the it's almost ready, slap a thick chunk of cheese onto teh bacon, and let the heat come through and start to melt it.

Keep in shape over the bacon. Top with another slice of bacon, then flip over. Heat for a bit longer, and into heavily buttered bread and smear with brown sauce..

Heart attack in a sandwich :D

Czech Soul Food

Deep fried cheese is a staple in Czech restaurants. My wife is on a low carb diet and makes crisps by baking parmasean shavings on a non-stick baking sheet. Bake until the cheese melts and bubbles. Take out of the oven and allow to cool until crispy. Very yummy and works with other hard cheese like cheddar etc.
