Hi and welcome!
You'll find all sorts of info on this site, as for coffeeshops you can't go wrong with mellow yellow for starters.
Have a good trip in advance.

my top 3 favourite coffeeshops..
dampking for nyc diesel (smells like baby vomit)
grey area for grey mist crystals
barneys for amnesia haze
everyone is different so try as many coffeeshops as possible but do read up on the coffeshop reviews on this site they are frank and honest.
stay away from FEBO food outlets (never buy hot food from a coin operated machine) hash, torture and sex museum were a waste of money. heineken brewery well worth a vistit though 15 euros for tour 2 beers and your own personalised bootle of heiekento take home. like the cannabis collage as well and its free. Waterlooplein Flea Market is nice and wierd the Van Gogh Museum is lovely if you like painting but opposite from it is the BIG i amsterdam sign well worth having a picture next to it. canal trips are a bit too pricy but if theres a few of you get really high and rent out some canal bike and play bumper cars for cheap canal trip St. Nicolaas Boat Club is much nicer they dont charge anything but ask for a small donation.also they have lovely parks in amsterdam and if its a nice day well worth a trip to Vondelpark.
Now if you want something different you can get train to Haarlem going there this time to birdys coffeeshop to try the jelly hash. You can get the metro to the arena stadium and visit the ajax football museum or how about going to pinball magic has over 30 pinball machine plus indoor go karting and lager tag to boot, it is about 40 minuetes away from central station but a nice day out. Hope some of this helps you.
