Depends on which exit you're takin' leaving Centraal.
If it's the West one then I'd recommend Interpolm, for nice, reasonably priced glass pipes and a few odds and ends.
If the East, then Baba Souvenir Shop down Warmoestraat, although a tad on the spendy side but a better selection.

interpolm is closed, i walked by on my last trip and the place was completely empty.
baba is a good choice, large selection and resaonable price. i also like to purchase my small pipes from sensi coffeeshop. most coffeeshops will have pipes you can borrow.
i tend to avoid the places on damrak, they are expensive.
the old man head shop is very close to dam square and will have everything. there is also a large one near the waag.
