I think the general consensus here would be to hop on the #5 tram to Leidseplein where there's 3 or 4 top rated shops. I don't believe there's any coffeeshops near the Hilton which is a ways out. It's over an hours walk to Dam Square.

The main RLD is pretty concentrated with 2 separate sections- the Sexyland area near the Old Church and Bulldog coffeeshops and along Oudezijds Achterburgwal and it's sidestreets roughly just West of Nieuwmarkt. You might check the schedule more closely if you're going on a Saturday or Sunday as it's an hour or more later those days when the trams and train changeover to day schedule from the minimal over night runs.

The Amsterdam Centraal to Schiphol trains run once per hour from around 1 AM to 5 AM. From 5 AM on there's at least four trains per hour.
