nice write up - sounds like you had a great first trip!

I loved the cheese class - did it probably 10 years ago
actually was fascinated by the 100 year old broken down shed that the cheese was cured in
i had imagined this clean, shiney place...but no a wooden shed with holes in the walls
otherwise alot of nothing as you said...
but the cheese!
omg the nuanced differences of taste and texture of the cheese as it aged
I thought it was so cool to taste the progression of aging
(did the wine pairing class)
so for those who enjoy such things - go for it!
