One part of Canada you will miss on the train is Newfoundland, the most easterly part of North America. It's closer to Europe than Vancouver on the west coast of Canada.
It's an island so you have to ferry or fly. there is also no trains in Newfoundland, but plenty of moose and salty beef and great hospitality.
