Cue Boner and his de Klos reco. Actually, besides the ribs, they do an excellent lamb shoulder if that appeals to you. I'm in a dilemma regarding De Klos, do I go there or do I try the Loetje which is supposed to have the best steaks in Amsterdam, both isn't an option.

I've read about Loetje too, but must confess, am a little put off by the fact that they fry their steak in butter, they way the Dutch prefer. Like you, I like my steaks seared on a grill, be it charcoal/gas. Heck, anyone can toss a steak in a frying pan. There must be something to it though, as Loetje is beloved by Amsterdammers.

BTW, I'm sure you're already aware that Hotel de Port van Cleve is supposed to be highly regarded for their steaks.
