Depends what time you want breakfast, most businesses are late openers.

I have 2 places I love for breakfast in Amsterdam.

First I would say try Sara's Pancakes at Raadhuisstraat 45. My favorite is their apple bacon pancake. I think she opens at 8. I also learned my favorite dutch word here, "poffertjes".

My other breakfast spot would be a little cafe right next to the Anne Frank House. I think it is called Lunchcafe Dialoog, just look for the red awning next door to A.F. House. The lunchcafe does an incredible toasted frenchbread sandwich. This place is a good stop before or after A.F. House. They also have free WiFi for customers.

I still stand by the "cafeteria" in V and D department store beside the flower market.
Opens at 10am, you get a coffee, egg and croisant for like $3.50, most places charge more than that for the coffee alone.
