I'm not talking about the cold ones in the display case. I know exactly what you want.
Just ask them. They will pour melted chocolate over a fresh waffle for you.

For fresh ones rather than the cold/reheated bakery ones, you can get them all year at the Albert Cuyp market (giving the fresh stroopwafel dude a bit of competition), or, during the holiday season, you can get them at Leidseplein and Rembrandtplein. Tasty little buggers. :)
