Wok2Wok - You can choose nuts and/or mushrooms for the middle selection while the carnivores choose meat. There's one in Leidseplein and one just off the pedestrian street parallel to Damrak (Nieuwendijk). (You pick a base, either starch and veg or pure veg, 1-3 additions like meats, nuts, fruit, or mushrooms, and a sauce.)

Any Indian restaurant - Pakoras (battered fried veg), Dhal (spiced mashed lentils), etc. Are you strict Vegan or do you eat cheese? If you do, Palak Paneer (spinach with cheese cubes) is quite tasty. Tasty flatbreads soft or crispy (poppadum are crispy and made from lentil and wheat flour, naan is soft made from wheat flour plus onion or garlic or raisins & nuts, etc.)

Pretty much any Chinese restaurant - Ma Po To Fu - stir-fried firm tofu with veg and sauce, as well as some other tofu dishes and all the vegetable dishes.

Again, if you eat cheese, pretty much any place with electricity will serve tostis - cheese melted on top of bread slices. Often have the option to add tomato, onion, maybe something else slices to the cheese. This is basic bar food in Amsterdam. Beverage of choice and a tosti is a great pick-me-up. The carnivores can get their with salami or ham in most cases.

Pancakes. Pannkoeken in Dutch. The big pancake places have more add-in options than you can shake a stick at - meats, cheeses, fruits, veg. It's like a pizza parlor, but it's PANCAKES!!!! Only down side is that the sweet syrup is not maple syrup. (Die hard US New Englander here.) I end up getting cheese/apple/bacon almost every time.
