The answer to both questions is yes, however, there is more to it...
The following opinions are based on my taste buds, my body, and my mind...

...there are various techniques used to extract trichomes; dry sift, water, butane, hexane, and CO2 just to name a few.
Dry sift/CO2 (Kief, etc...) and water extracted trichomes seem to retain the most aromatic hydrocarbons (terpenes). I think this is due in large part because the trichomes remain mostly intact, not liquefied. In addition, no heat is used in the process, which is also is a contributing factor in the loss of aroma and flavor.
As for making a distinction between Indica and Sativa, typically the differences are the same as when smoking bud, just intensified due to the removal of plant material (rum and coke vs. straight rum). Indica based concentrates should provide more of a stone, and Sativa more of a high, however, depending on when the trichomes were harvested (clear/opaque/amber), these effects can be experienced with both.
On a side note... as most of us know, concentrates other than water extracted (bubble hash) are illegal, and yet a few daring establishments continue to offer them.
I suppose one perspective is that the Govt. is satisfied that most establishments have deferred from selling concentrates, and is tolerating these few rebel establishments.
I have other perspectives, but I like the above... it's how coffee shops started anyway, toleration - within limits.
