Are there 7-11 type of places or do you go to a small market and how accesible are these stores near downtown :?:

To me, one of the great mysteries of Amsterdam is how few places like that there are...no 711's at all...even rural Thailand has 711's! Trying to find a bag of Doritos and a can of coke after 8pm can be a real challenge in many parts of the city. The RLD is the best bet late at night if you dare. Stock up in the daytime is my advice.

I forgot to say - Albert Heijn behind the palace on Dam Square is great for food in the daytime (supermarket).

There is also a "General Store" run by a couple of paranoid chinese characters in the RLD opposite the Smoking Bull coffeeshop, its open till 11 or 12. Paranoid - because they follow you all round the store to see if your gonna nick something! lol

Stroopwaffels, some of the best can be had at the Albert Cuypt Market, fresh and hot off the press. Yum.

there was a place I visited a few times on Prins Hendrikkade I think, somewhere between Central and Future coffeeshops. It wasn't a 7-11/Spar type shop as such, but did sell cans of beer, bottles and cans of juice, crisps/chips and some good cakes and pastries. Probably had candy/sweets too, but I can't really remember. It was a kinda last stop on the way back to the hotel sort of place, but quite good. They had tables inside and maybe even served hot food. Was open til 10-11 at least.

The mini Supermarkets are what you are looking for. They carry most items a 7-11 would but including some produce and no slurpees :/. I think they are somehow subsidizes or monitored by the local government because I think they are required to carry some products but I cannot say for sure. They also sell stripenkaarts for the tram. The other palces you want to look for are late night shops. They are sorta like a cross between a deli and small 7-11. They are usually open until at least midnight and don't open until late afternoon. There is one close to the Greenhouse Namaste for an example.
