I am a Canadian girl who will be traveling to Amsterdam this upcoming November for a couple of days. If anyone has any advice as to what places / activities I should check out, that would be awesome!

To figure out what coffeshop is good and what not, just check the
coffeshop reviews page here on the forum, tons of information there...
If you would like to meet some people in the dam just check out the
toke & talk page, if there is no one.. just set up your own
Gappie is the local Amsterdam Superstar and super cool tour guide,
maybe you can contact him, he's always up for some coffeshop
crawling

Depends what you wanna do, but if you going about 15 minutes from the city you can find a really nice coffeeshop, Kashmir Lounge, and not far from Leidseplein you will find my favorite, 1e Hulp!!!
