You probs already know this dude and it's not a coffeeshop - but I'm pretty sure the Ton Ton Club have pinball machines.
They have two locations: Sint Annendwarsstraat 6 at the corner of Damstraat and Oudezijds Voorburgwal and the other is at Westergasfabriek, Polonceaukade 27 1014 DA Amsterdam
