Things (Coffeeshops) seem to close Christmas day morning but many were open again Christmas afternoon. It seems to be pretty much business as usual. Hopefully the weather will be as mild as last Christmas. I may go back again this year.

They will be open as will many restaurants, but for restaurants you will need to book in advance. The Dutch are mainly Protestant heathens so they have no respect for Christmas. A good Catholic wouldn't lift a finger for a week either side of it
It's cold in a fair bit of the Northern Hemisphere at that time as well. But there are no coffeeshops to pop into when you're out and about. Result: Amsterdam wins.
Last year Xmas was quite mild and I did a lot of walking, I was there in November and it was far colder. I live at a higher latitude than Amsterdam anyway so I'm sure I will survive. As FOD points out, you can hide in a Coffeeshop
