Regarding the supply to coffeeshops, please do yourself a favor and research a bit about the backdoor problem / paradox / challenge / fuckeroo, as it is quite well described out there. To sum it up: Only what goes out the front door (i.e. 5 grams max per customer per shop, over 18 only, must be able to show ID at all times while in premises etc. etc.) is decriminalized / tolerated, the supply (i.e. what comes "in the backdoor") is still a criminal activity. Translated it means that it is very unlikely that you will ever get any info on the inner workings of that part of the coffeeshop scene, unless you become a part of it by other means than walking in the door and asking questions. It also means that, at least in the open, no coffeeshop sells "their own weed" as a direct connection to an illegal activity like that would spell their immediate demise.
The best advice here, if you are very, very serious about it, is move to NL and get involved with the scene. This usually means working your way up from a very low point, having access to a very good supply of product at low costs (and the willingness to risk long jail sentences should you be caught) and / or have 1 million+ € (and that is probably setting the bar low) laying around to buy your way in. All in all, it takes a lot of work, a lot of luck and a lot of resources for your dream to become a reality and you might be better of looking for other places to "set up show", but it is not impossible.
