They always come out to dry for me when i use a ready mix. So i use a strawberry ready mix for fairy cakes (ASDA) which is spot on.
I will give this a try (Well the misus will) and hopefully nice and moist and easy to eat. We will see!! :lol:

if u leave the herb in, i think a bit more butter is needed as it kind of absorbs some moisture/fat

Yup. 8) Although I did make an excellent stroganoff with fresh sage and elk tenderloin recently.
