The Paradox does an excellent veggieburger around lunchtime...and there are veggie takeaways,cant remember what they're called...and of course plenty of asian restaurants for vegetarian meals.

The Get Lost Guidebook has some good suggestions. I used the book to find bio shops.

ive heard good things about this place:

De Bolhoed-Prinsengracht 60- 62
1015 DX Amsterdam, Netherlands

supposed to be the best for veg/vegan!
