I voted for Homegrown Fantasy, Dolphins and Hill Street Blues.
Homegrown Fantasy was the first proper coffeeshop that I ever visited and I still have a soft spot for it seventeen years later. I like it best in the afternoon when it's a little oasis of mellowness away from the crowds nearby. The menu has got less and less extensive over the years but it's still of a pretty consistent quality.
When I'm in Amsterdam, I spend most of my evenings downstairs at Dolphins. There can't be many more comfortable seating areas in any Amsterdam coffeeshop. The menu, or lack of, is a bit of a let down but White Dolphin is always reliable.
Both Hill Street Blues have become regulars for me over my last few Amsterdam trips. I like the grungy feel and views from the back windows of the Warmoestraat branch. The Nieuwmarkt branch has some of the best people watching options with it's views of the people coming and going from the RLD.

I've been to Amsterdam once and visited 3 shops (Green Place, Basjoe, Barney's Lounge). Not all votes are created equal I suppose.
