Not sure on appartments but ~I just booked 16th to 22nd in my usual hotel for under a thousand. which is normally a good 1300 plus normally.

I believe that the Amsterdam government has cracked down on a “apartment renters” that are not legal, supply and demand would cause the price increase

They have been cracking down for a few years now, places last year are up 500 euros plus for a week stay , crazy , maybe the prices will drop by Jan. I found a very nice apartment in the Rembrantplein area last year for only 100 euros per night. If was from "City Mundo" which has since put their business on hold because of the C-19. Im just bitching about how much they went up, since my flight was free, i have a bit extra to drop on a place, but 300€ plus a night really sucks

It's been nearly a year since I was last over in Amsterdam, but the last few times I stayed at the West Side Inn (now Best Western) - sort of half way between the Amsterdam Nieuw-West and Amsterdam-Zuid districts and quite easy to get to on the number 2 tram at the Westlandgracht stop - trams are roughly every 10 minutes or so to Centraal station and although I used to prefer being closer to the action and within walking distance of the trains, I was pleasantly surprised by this place.
They have lifts for a start, and the rooms are very nice, comfortable and clean with safes and ensuite bathrooms and it's a damn sight cheaper than the hotels in the centre of town! Average price per night seems to be around £50 and they have a bar and restaurant with a buffet breakfast which was €11 if memory serves me right - I think I got a discount on the breakfast the last time because I stayed there before and I booked direct with them rather than going through a booking site.
It's only a short walk from the tram stop and there's a Lidl just around the corner in the Delflandplein shopping centre for snacks and drinks, though they had a couple of machines in the lobby with snacks and drinks available as well.. Takes about 20-30 minutes to reach Centraal station, but as the tram goes through Museumplein, Leidseplein, the Dam and all the way to Amsterdam Centraal Station, it's handy for most of my favourite hang-outs anyway!
Well worth checking out - I buy a tram pass for however many days I'm there while I'm at the airport, so it saves on all the walking for my poor tired old legs!
Edit: forgot to mention - there was also a fridge in the room and very importantly for me - luggage storage before and after your stay - so if like me, you arrive early and before check-in, you can drop your luggage off and go back to exploring the city. Similarly, you can check out on your last day on time, then come back for your bags if you have an evening flight! Nice extra little service that you don't often get in the city centre - nothing worse than trying to drag your bags around the coffeeshops if check-in isn't for a few hours!

Proof that November/December is always cheapest time to go, 2 nights for 30 yoyos! It really helped this poor Spaniard get back to Mecca

Flights are quite expensive from BCN as Ryanair dont do that route anymore, now costs 150-300 vs 60-120, am sure all the other things going on impacting the price too.
